These pancakes are loved by all my family and sometimes it’s hard to please everyone. In this recipe, I use gluten-free oats. Gluten is a protein that is found in some grains especially wheat, barley, and rye. Oats don’t contain gluten but they may be contaminated with gluten from other grains. Some people may have an allergy or intolerance to gluten, which can cause inflammation in the body. My son suffers from eczema at times and therefore he avoids gluten when he has a skin flare-up. I myself avoid wheat especially refined wheat as they contain no nutritional value since almost all the fiber, vitamins, and minerals are removed from them. Oats on the other hand provide a good source of soluble fiber, which can maintain a healthy gut and may help to treat high cholesterol and keep blood sugars stable.
This recipe has lots of flavour as well as being of high nutritional value with the added fruit: bananas, berries, and apple adding lots of anti-oxidants to the diet.
Recipe
400g of Oat flour (blend ordinary oats into a fine texture)
3 tablespoons of baking powder
2 teaspoons ground cinnamon
1 teaspoon ground cardamon
1/2 teaspoon sea salt
400 ml unflavored plant milk (rice, oat, almond)
400 ml water
1 tablespoon vanilla extract (organic)
2 tablespoons apple cider vinegar
2 apples finely chopped
Optional: berries and sliced banana
Method
Combine oat flour, baking powder, cinnamon, cardamom, and salt into a bowl and mix well.
Add plant milk, vanilla extract, cider vinegar, water, and whisk until well combined. Add finely chopped apple and stir to incorporate.
Let batter stand for a few minutes to thicken.
Heat a cast-iron pan over medium-high heat for a few minutes until hot, then reduce heat.
For each pancake, ladle about 1/4 cup of batter into the pan. Cook until small bubbles start to form on the outer edge and
then the center of each, for a few minutes. If you would like to add berries or sliced bananas, add them just before you flip the pancake, then cook the pancake for a few minutes more.
If you like the pancake sweeter you can add honey or molasses
